Salers is a French raw-milk cheese made from cow’s milk, a non-cooked pressed cheese from the department of Cantal. The “Salers” designation is protected by the AOC label since 1979 and by AOP since 1996.
In 2016, the Ministry of Culture entered the know-how linked to producing Salers in France’s Inventory of Intangible Cultural Heritage.
