Between the Albigeois and the Gorges du Tarn, the land of Roquefort and Saint-Affrique bears a distinctly southern character. The six cantons of the Roquefort area form the southern part of the Parc naturel régional des Grandes Causses. Roquefort is a famous cheese from Aveyron. An emblem of French gastronomy with worldwide renown, it is matured in the caves of the village that bears its name: Roquefort.
