A little mountain excursion in the Ossau Valley, rest and quiet in these beautiful landscapes. Ossau-Iraty is the only ewe’s-milk cheese from these splendid Pyrenees to hold AOP status, and has done since 1996, with AOC dating back to 1980. Like the best natures, its flavour asserts itself with age. Between 6 and 8 months, it offers all its aromas, to nose and palate alike. The flavours then stand out clearly, delicately marked by ewe’s milk, a hint of hazelnut on the tongue, a moment suspended in everyday life.
